Sweet Potato Mediterranean "Pasta"

Sweet Potato Mediterranean "Pasta" is a delicious, easy summer dish that provides all the sweet, savory goodness of a sweet potato without the empty carbs of traditional pasta.
  • *Veggie Spiralizer
  • Two (2) large sweet potatoes, peeled
  • Turkey kielbasa
  • Artichoke
  • Black Olives
  • Plum Tomatoes
  • Extra Virgin Olive Oil (EVOO)
  • S&P, to taste
  1. Spiralize the potatoes.
  2. Slice the kielbasa into medium-thin rounds.
  3. Chop artichokes into hearty chunks.
  4. Heat two tablespoons of EVOO in a lightly salted saucepan.
  5. Put the noodles into the saucepan and saute until sufficiently tender.
  6. Turn off the heat once the noodles are tender and add salt and pepper to taste.
  7. While noodles are still hot, throw in kielbasa, artichoke, olives, and plum tomato and toss to mix.
